Vietnamese Chicken Salad with Lime Vinaigrette and Peanut Sauce

4 cups shredded napa cabbage
1 10 oz bag cole slaw
3 cups shredded cooked chicken
2 cups matchstick carrots
2 cups chopped cucumber
3/4 cup radishes, thinly sliced
3/4 cup minced green onion
1/2 cup chopped peanuts
1/4 cup minced cilantro

*combine all ingredients together in large bowl(it makes a LARGE salad)

FRESH LIME VINAIGRETTE
1/2 cup vegetable oil
2 tbsp rice wine vinegar
2 tbsp fresh lime juice
1 tbsp honey
1/4 tsp salt
1/8 tsp ground red pepper

*in a small bowl whisk together all ingredients, cover and refrigerate for up to 24 hours before serving.

PEANUT SAUCE
1/2 cup vegetable oil
4 tbsp creamy peanut butter
1 tbsp soy sauce
1 tbsp fresh lime juice
2 tsp sugar
2 tsp minced fresh ginger
1 tsp sesame oil

*in a medium bowl whisk together all ingredients, cover and refrigerate for up to 24 hours before serving.

**right before serving pour the fresh lime vinaigrette over salad and mix well, then add peanut sauce and mix well.
